Ustung makanyan na ing panaun, makayagnan ing mangalto na la naman ding miyaliwang patalastas para miragdag ka pigastusan uling ngara pin: Masakit sasakit ngeni asna kasakit ing bie at eka makiragdag karing mikakasakit uling tutung masakit nung ing manintunan ing mikasakit lalung tanang magkasakit.

Nung mataluki ka mu ing mismung makapatulug kekang tanaman a bibie bunga ya ing kanan para pasiknangan naka pamikatawan. E wari ustung datang na ing kaleldo, ding miyaliwang masabo prutas ilang dakal a pupulan, anti damo ring pakwan, melon, santol, chico, makopa, duat, guayabano, kasoy, siriguelas, yangka, pinya, mangga. Ibalik taya king biabas. Atatandanan ku pa karing adwang bale matua king Concepcion atin lang misumangid a mula para karing bungang tanaman. Ela kabud dakal a tanaman biabas, nune miyaliwa, king pang pasbul, makayabang la ring adwang Biabas Denas asna katalik mamunga. Deni ring mangaimpis a balat, malutu (actually dark pinkish hue) la lagat ngara pin ding matua. At eyuku kaylian, uling makanyan ing keragulan kung daramdaman kalupa na ning malutu ning ebun (na balu ta ngan ene man malutu nune dilo ya). Bayu ka pa makapanyiklod, akwa munang makapamiabas manibalang kekaban panayan meng mibuklat ing maragul a pasbul. Oreni ding manyaman, sisigan, maglagutuk la at lalu lang niniaman nung tiltil mulang asin o makagisang baguk.

Banda na man kilub, atin yang makapalibutad y Mang Lucing at babalut do pang diaryu ding bunga balang e matusuk insektu ding paragulan dang biabas damulag.

King gulut bale, nung nula karin makatalatag king papag a makaba ding mangaragul a kawa, balanga, kalderu, siense, sanduk, karin no man makabanda ring mamungang tanaman pikuwanan king lulutu. Karin makabalebe la ring dakal a biabas samut lang mangakapal a lagat at madilo dilo la laman, ampong ding butulan, tiktak la king kaslam a bunga. O reni ding pag bulanglang ustung makanyan a makayusu la ring biabas, egana gana na yatang lutu at singkotsa malyari king bulangbalang atakman kuna. Malyaring Bulanglang mu miyaliwa ya bulug at tutung ena ka man mipasawa uling manaliwa ya nyaman atiu king inabe mung sangkap. Ika kayang mamasa, sanu ing pinakaburing ilyupan a sabo bulanglang? Itang bilugan butul butul atin iking babi, paro tabang o lunu, alimasag, o bangus?

King karakal da ring tanaman at bungang biabas, keragulan ku naman ing miyaliwang gamit na ning biabas. Manibat king tulud a malyari mung gigutan nung malambut ka natural (manakla o magbulus, abe!). O itang berdeng matua ng bulung pakuanan dakang pitu, ilaga at inuman anti mong tsa nung miyalimuman ka o tatalamtam ka atian. Bayu pa datang ing kauran, kekaban babawasan do ring sanga, karin la naman pipili ding koya at pisan gawan tirador. Deta naman matua at matabang sanga, panalilan dala pulu ding sanduk, at kawaling bakal bang eka masasalab potang mikakaluku ing tangab king kalang. Itang mitagan, kaibat milako ing bulung, yabe danang palangyan karing talaksan.

Kanita disnan ku pa ustung maranun, bayu dumulung king palengke, payagtal dala ding mangalulut a bunga, bang paglibe miyaliwang panyangkap karing mag gugule. Ngeni man panaun kunang mamalengke, sindu ku pa ing keragulan ku. Bayu ku dumulung maranun, agtalan ku la ding bungang malulut sobra king gamitan kung pamulug bulanglang idala ku nala king suking gule.

Oneng potang datang nala ding pupul king baryu, oyta, akit kuna lang milage ding kawang maragul at karas ning gatpanapun, sasalingalngal na ing bawu ning meyumwan lagat biabas. Oyni ing palaman pandasal neng abak. Emu para paruminggu nune milang bulan tin kang pagmayumu at palaman. These days on the hypermart shelves, our kids know it as Guava Jelly.

There are memories from the days of old that display a stark difference in the lifestyle then and now. What we see in expensive bottles marked as all natural without preservatives for our fruit marmalade or jellies to sweetened fruit in bottles were all traditional weekend cooking in the bale matua. .

Be it Biabas, Yangka, Mangga, Macapuno, Burung Mustasa, Sampelut, Balo-balo, Burung Asan, when a Kapampangan talks about it, it means more than just the fruit, the labor, the feast on the table. It is the depth, passion, zest for life and high regard for the bounty Nature has provided which puts the Kapampangan cooking a notch higher than all the rest.

Nenette de Dios Capulong of (Westminster, Colorado, USA) writes...

Ces, your article made me crave for bulanglang. I prefer bulanglang bangus with plenty of gandus and kang-kung. I miss my aunt who sold panyigang and bulanglang at Angeles market. She always peeled the gandus for me and gave me extra kangkung. The one we can get here from the Asian store is the Knorr pang sinigang sa sampalok or bayabas. There is milkfish here but frozen probably for months. Don't even dare buy the bangus scared of what it will taste like. My Dad also had a guava in the middle of his big yard with the fruit as big as the pears here. I can remember the fruit trees all over his triangular big yard. Our house in Angeles was built on the left corner of a tiangular lot big enough for 3 houses so there is plenty of space. The front by the gate is a dwarf cocunut tree whose fruits are colored orange. It is not tall, on the right corner is a langka tree, next is a kaynito, then a santol tree, next is an avocado tree whose fruits are very big, the furthest corner is a banana tree that bears the sweetest banana fruit.. In the middle of the yard before the atis tree and the guava tree is a papaya tree. So even the produce in the Philippines is affected by techology and chemicals too, like you said about fruits not in season being sold early. Soon Philippine consumers will pay more for "organic produce" (chemical-free) like we do here, from fruits and vegetables to milk , juice and meat. Yes, some Ffilipinos here in Colorado are planting vegetables in their backyard before the first snow comes. I went to see a friend last week, she had kalabasa, opu, amplaya and eggplant in her backyard. The Philippine vegetables we buy at the Asian store rot faster probably because of chemicals. My brother Odie was making me laugh after my surgery in 2005 when he said " Saguli ya yan, tapalan yang bulung biabas"
