-1tbsp vegetable oil
-2 cloves garlic (minced)
-3/4 cup onion (chopped)
-1/2 tsp
-ginger (julienne)
-1/2 lb pork tenderloin (diced)
-1/2 lb pork liver (diced)
-1/2 lb pork kidney (white outer membrane removed, and diced)
-4 cups beef broth or water
-1tbsp fish sauce (patis)
-1 tsp salt
-1/2 tsp black pepper
-1/4 cup green onions (finely chopped)

In a large pot, heat the oil and saute the garlic, onions and ginger until the onions are transparent, about 2-3 minutes. Add the pork meat, liver and kidney and stir-fry for 5 minutes. Add the broth or water, fish sauce, salt and pepper and bring to a boil. Lower the heat, cover, and simmer for 10 minutes. Add 2 oz of thin noodles to the soup in the last minute of cooking. Garnish with choppped green onions. Serves 4 to 6.
