RECIPE 1: Adobung Tokwa King Gata


1 block "tohu" or 4 pieces regular cut "tokwa," cubed about 1 inch square
2 large eggplants, slant-sliced ½ inch thick
Few thinly sliced ginger
1 stalk onion leek, sliced thinly
1 cup coconut milk, 1st squeezed (unang piga)
4 tablespoons soy sauce
2 ½ tablespoons vinegar
Dash of pepper and salt to taste
1 bay leaf
1 tablespoon brown sugar

O kaybat?

Deep-fry sliced tokwa, make them crispy according to liking, let cool. Mix all remaining ingredients except onion leeks, vinegar, and tokwa. Bring to a boil. Let boil for 2 minutes in medium heat. Add fried tokwa and onion leeks. Drizzle with 4 tablespoons vegetable oil and vinegar. Mix gently and turn off stove.

RECIPE 2: Balatung Burger Á La Steak


1 cup mung beans (balatung)
1 stalk onion leeks (or use 1 small onion instead), finely chopped
2 tablespoons soy sauce
Dash of salt and pepper, according to taste
2 slices old bread or 2 leftover pandesal, crumbled (1/2 cup flour will also do)
Half teaspoon cumin powder or curry powder (optional)
Sauce (choose any, be creative: ketchup, cheese sauce, regular gravy— bahala na kayo!)


Boil mung beans until soft to mash (be sure not to use too much water, just enough not to let the mung beans dry). Let cool, drain, remove excess water. Mix all ingredients, form into balls, and press into patties. Pan-fry with fair amount of vegetable oil in medium heat.

RECIPE 3: Squash and Moringa (Malunggay) Cream Soup


5 cups sliced, peeled yellow squash
1 ½ cup malunggay leaves
½ cup cream (any)
½ cup evaporated milk
1 finely chopped celery stalk (separate leaves, chop, and use for topping decoration)
4 cups water
Salt and pepper to taste

Mangisnawang malalam...

Bring 4 cups water and squash to boil. Mash squash once very soft on the pot or until you get a blended-like consistency. Add all remaining ingredients and bring to boil for 3 minsutes more while stirring.

RECIPE 4: Tokwanissa (Á La Longganisa)


4 pieces tokwa, frozen overnight (frozen tokwa once thawed will have a rubber consistency like meat; for those in a hurry and hungry, bake tofu in a regular toaster for few minutes to dry or to remove water from tofu)
2 cloves garlic, finely chopped ("dik-dik")
½ teaspoon fine black pepper
½ teaspoon salt
3 tablespoons brown sugar
1 slice leftover bread or pandesal, crumbled
3 tablespoons banana ketchup
1 tablespoon soy sauce
Sprinkle of hot sauce (optional)

Nyaman na ya 'ta?

Pat tokwa very dry with clean cloth or paper towel. Mix all ingredients well until reaching a "holding" mold. Add a few more crumbs for firmer consistency. Form into individual elongated shapes (like small hotdogs). Let forms sit covered for a day or more in the ref. (Again, for those who cannot wait for another day, you can immediately fry them, but you will get less flavor). The longer the storage, the more fermentation and mixing of flavor occurs. Fry like skinless longganisa. (During storage, excess liquid may appear. Drain!)

Note: Onion and garlic add acidity to food, which is inconvenient to people with gastric acid intolerance. Most vegetarians use other herbs such as parsley, oregano or basil for alternative.

Kailangan mung misip, pagal bagya, ampo pamanyubuk, e mamagmase-maselan, daig tala pa reng susyal keng manyaman at masustansyang pamangan. O subukan yu pa deni ne, abe? King tutuki, vegetarian "dinuguan," bbq, bulalo, sisig, minudu, estofadu, pasta, pizza, paella, aroz valenciana, ampo nung nanu-nanu pa.
